Mentha arvensis grows natively along the river banks of the Mekong valley and required no outside introduction to reach the kitchens of Laos. This is the point worth making first: mint in Laos is not an import story. The herb was already there, growing wild, available to anyone who walked near water. What the Lan Xang Kingdom (founded 1353 CE) contributed was not the discovery of mint but its elevation: its integration into one of the most celebrated ceremonial dishes in the region. Laab (known as larb in the Isan region of northeastern Thailand) is the national dish of Laos and the ceremonial food of the Lan Xang royal court, the word meaning both 'minced' and 'auspicious' in Lao. Neither ingredient is native to Morocco. The peppermint industry began in a single English parish. Peppermint (Mentha × piperita) was first described as a distinct species by the botanist John Ray in Synopsis Methodica Stirpium Britannicarum (1696) after specimens were found growing wild in Hertfordshire, a natural hybrid of spearmint and water mint that had apparently arisen spontaneously in English hedgerows. The apothecary community immediately recognised its exceptional menthol content, and by the 1750s commercial cultivation had concentrated in Mitcham, Surrey, a parish with unusually deep, well-drained alluvial soil that produced peppermint oil of extraordinary quality and concentration. By 1800, Mitcham was the global centre of the peppermint world: its fields supplied London's confectioners (peppermint drops, peppermint creams, and sugar-shell mints became the defining after-dinner confection of Victorian England), its oil was exported to continental Europe for liqueur production (crème de menthe, peppermint schnapps), and its reputation was such that 'Mitcham peppermint' became a quality designation. The mojito's origins are disputed but converge on Havana in the second half of the 19th century. One tradition traces it to the draque (a 16th-century medicinal drink of aguardiente, rough sugarcane spirit, lime, sugar, and mint) served to Sir Francis Drake's sailors for scurvy prevention during his Caribbean raids. The more credible commercial lineage begins with the establishment of Cuban rum production in the 1860s (particularly the Bacardi distillery, founded in Santiago de Cuba in 1862), when bartenders at Havana's La Bodeguita del Medio combined white rum, fresh spearmint, lime juice, sugar, and soda water into the drink now known worldwide. The mojito's popularity accelerated when Ernest Hemingway made it his declared regular drink at La Bodeguita (though scholars dispute how regular his actual visits were), and it entered global cocktail culture in the latter half of the 20th century. The mint in a mojito is not merely stirred but muddled (pressed against the glass to release the herb's aromatic oils without fully bruising it), a technique that represents perhaps the most precise articulation of spearmint's essential character: enough pressure to release the scent, not enough to release the bitterness.
