Manihot esculenta Crantz, a woody shrub grown for its swollen storage roots and, across much of Africa, for its leaves as well. Its wild ancestor is Manihot esculenta subsp. flabellifolia, still growing along the southern rim of the Amazon basin. Three plants are routinely confused with it and none is a relation: Yucca, the ornamental of the asparagus family, which shares only a spelling; Maranta arundinacea, arrowroot; and Metroxylon sagu, the sago palm, whose starch is sold under names that are usually on cassava packets.
Cassava was domesticated once, on the southern rim of the Amazon basin, in the transitional country between rainforest and the Brazilian Cerrado that is now Rondônia, Acre, and western Mato Grosso. Genetic work comparing cultivated plants against wild populations places the ancestor firmly: Manihot esculenta subsp. flabellifolia, which still grows there, and which nothing else in the genus comes close to. There is no second centre and no second lineage. Every cassava plant on earth, in Nigeria, in Java, in Kerala, descends from that one event, somewhere between eight and ten thousand years ago.
What was domesticated is a shrub that is propagated from stem cuttings rather than seed, which is the first of its great advantages: a farmer carries a bundle of sticks, not a sack of grain, and every plant is a clone of a known parent. It tolerates drought, acid soil, and exhausted ground that will not carry maize or rice. It has no harvest date, because the roots simply sit in the earth for a year or two and can be dug when they are wanted, which makes it a crop that cannot be burnt in the field by a raiding party and cannot be seized by a tax collector who arrives at the wrong time. Those properties, rather than any culinary merit, are why it has travelled as far as it has.
Set against them is the reason nobody else in the spurge family is eaten. Cassava roots contain cyanogenic glucosides, chiefly linamarin, and the plant carries in separate cells the enzyme, linamarase, that converts them. Break the tissue and the two meet, and the result is hydrogen cyanide. Varieties are divided by growers into sweet and bitter: the sweet ones hold little enough that peeling and boiling will do, whilst the bitter ones, which are the higher-yielding and the more pest-resistant and therefore the ones most widely grown, will kill a person who eats them as they come out of the ground.
The processing that makes bitter cassava safe is among the most sophisticated food technology any pre-industrial society developed, and it was developed in Amazonia. The root is grated to rupture every cell, so that the enzyme is given the fullest possible opportunity to do its work; the mash is then pressed, in the Amazon in a woven palm-fibre tube called a tipiti that lengthens and squeezes as it is weighted; and the expressed liquid, which carries the poison, is drawn off. The pressed fibre is toasted on a hot plate, driving off what remains. Nothing in the sequence is optional, and every step exists to move the same molecule further out of the food.
Two things fall out of that process besides the meal, and both became foods in their own right. The starch settles out of the pressed liquid as a fine white sediment: that is tapioca. The liquid itself, boiled hard and long, loses its cyanide and becomes tucupi, the sour yellow seasoning of the Amazon. A single root, worked one way, yields a coarse toasted meal, a pure white starch, and a fermented sauce, which is a versatility no cereal offers. Where the technology has been carried without the knowledge behind it, the consequences have been serious: konzo, an irreversible paralysis of the legs, appears in districts where drought and hunger have pushed people into short-cutting the processing of bitter roots.
Cassava left South America twice, in opposite directions, and the two departures produced two completely different plants in the mind of the world. The Spanish met it first, in the Antilles in the 1490s, as casabi, the great baked disc of Taíno bread that kept for months and became the standard ship's biscuit of the Caribbean. The Portuguese met it on the Brazilian coast as farinha, the toasted meal, and it was the Portuguese who moved it across the Atlantic.
That crossing is the single most consequential thing that ever happened to the crop. From the 1590s Portuguese ships working the South Atlantic circuit between Bahia and Luanda carried cassava into the Kingdom of Kongo, where it met soils, rainfall, and a farming system that suited it better than anywhere in its homeland. It spread through the Congo basin, along the Guinea coast, and eventually across the continent, and it did so as a famine insurance crop long before it became a staple: the roots that could be left in the ground were exactly what a region of slave raiding and crop seizure needed. Africa now grows well over half the world's cassava, and Nigeria alone grows more than all of South America together.
The eastward journey ran on other ships. The Manila galleon took it from the Spanish Caribbean across New Spain and the Pacific to the Philippines in the seventeenth century. The Dutch, who had held Pernambuco for a quarter of a century and knew the crop well, introduced it to Java around 1810 and promoted it hard through the nineteenth century as insurance against rice failure. The Portuguese Indian Ocean circuit carried it to Mozambique and thence to the Malabar Coast, where it sat as a minor garden plant until the Travancore famines of the 1860s and 1880s turned it into the staple starch of Kerala within a generation.
The last chapter is industrial and belongs to Southeast Asia. Thailand, which had no traditional cassava culture to speak of, planted the Khorat Plateau with it from the 1950s and became the largest exporter of cassava starch and dried chips in the world, feeding European livestock and then the global food industry. That trade is the reason a Taiwanese tea shop in 1986 had cheap tapioca starch to hand, and the reason the most widely recognised cassava product on earth is now a chewy black sphere in the bottom of a cup of iced milk tea.
Cassava feeds something in the region of eight hundred million people and is, by most reckonings, the third largest source of carbohydrate in the tropics after rice and maize. Nigeria is much the largest producer, followed by the Democratic Republic of the Congo, Thailand, Ghana, Indonesia, and Brazil. The striking feature of that list is how little the ranking has to do with trade: Nigeria exports almost none of what it grows, whilst Thailand, which grows roughly half as much, dominates the world market because it plants the crop for starch rather than for dinner.
The kitchen divides the root into two products that are constantly confused and are not interchangeable. Cassava flour is the whole root, dried and milled, and it carries the fibre, the colour, and a faint sourness; Brazilian farinha, Nigerian garri, and Ghanaian kokonte are all versions of it. Cassava starch is the washed-out pure starch, white and squeaky and flavourless: tapioca, Brazilian polvilho, and the pearls of a bubble tea. Substituting one for the other in a recipe does not give a slightly different result; it gives no result at all, because the starch gelatinises into an elastic, stretchy network that the flour cannot form.
Fermentation runs through the African and Asian repertoire in a way it does not through the South American one. Garri is grated and left to sour in sacks under weight for several days before toasting. Attiéké is fermented with a starter, granulated, and steamed. Ivorian placali, Congolese chikwangue, and Indonesian tapai singkong are all fermented, and in each case the souring both improves the flavour and finishes the detoxification that the grating began.
The leaves matter more than most people outside Africa realise. They carry a genuinely useful quantity of protein, far more than the root, and pounded and long-boiled they are the national vegetable of the Congo as pondu, of Mozambique as matapa, and of Sierra Leone and Liberia as cassava leaf. They must be cooked hard and long for the same reason the root must be processed. Nutritionally this is the crop's weak point and its partial answer at once: the root is very nearly pure starch, poor in protein and in vitamins, and a diet resting too heavily on it produces deficiency disease, which is why the leaf, the bean, and the fish beside it are not optional extras but the thing that makes the meal work.
Historical Journey of Cassava
Rondônia & the Southern Amazon — c. 8000 BCE
The transitional country where the southern Amazon rainforest gives way to the Cerrado is the one place cassava has ever been domesticated. Wild Manihot esculenta subsp. flabellifolia grows here still, and the genetic evidence points to it and to nowhere else: a single domestication, somewhere between eight and ten thousand years ago, from which every cassava plant now growing anywhere descends.
What the peoples of the lowlands worked out here was not how to grow the plant, which is easy, but how to eat it, which is not. Bitter cassava carries enough linamarin to kill, and the sequence developed to remove it is a genuine piece of chemical engineering: grate the root to rupture every cell and release the enzyme onto its substrate; press the mash in a tipiti, the woven palm-fibre tube that tightens as it is weighted, until the poisonous liquid runs out; then toast what remains on a hot clay plate until it is dry and gritty and will keep for a year.
The product of that last step is farinha de mandioca, and it is the foundation of the whole South American lowland diet. It is not a flour in the European sense and is not baked into anything. It is scattered over food at the table, stirred into broth, mixed with meat juices, carried in a pouch on a journey, and eaten by the handful; it supplies bulk, salt-free savour, and a texture that Brazilians will tell you a plate is naked without.
Two by-products of the pressing became foods themselves. The starch settling out of the expressed liquid is tapioca, whose Tupi name, tipi'oka, means the thing squeezed out and therefore names the press rather than the plant. The liquid itself, boiled long enough to drive off the cyanide, turns into tucupi, the sour golden sauce of Amazonian cooking. One root, three foods, and a technology that had to be got right the first time.
Hispaniola & the Greater Antilles — c. 500 CE
Cassava travelled north out of Amazonia with the Arawak-speaking peoples who moved up through the Orinoco and island-hopped along the Antillean chain, and by the time Europeans arrived it was the staple of the Taíno of Hispaniola, Cuba, and Puerto Rico, grown in the raised earth mounds they called conucos.
What the Taíno made of it was casabi: the root grated on a board studded with stone chips, pressed in a woven tube, sieved, and baked on a clay griddle into a large, thin, brittle disc. It is unleavened, has no fat, and contains nothing at all but cassava and sometimes salt. Left dry it keeps for months without spoiling, and it is softened at the table with water, soup, or oil.
That keeping quality made it the first American food the Europeans adopted wholesale, and they adopted it for a strictly practical reason. Wheat biscuit went mouldy and weevilly in the tropics; cassava bread did not. Within a generation of contact it was the standard ship's provision of the Spanish Caribbean, baked in quantity for the fleets, and the Spanish word for it, cazabe, gives English its name for the plant.
It has never gone away. Casabe is still baked in the Dominican Republic, in eastern Cuba, in Venezuela, and across the Guianas, and in 2024 the practice was inscribed on the UNESCO list of intangible cultural heritage. The Spanish also took the Taíno word for the root itself, yuca, which remains the ordinary term across Latin America and which has nothing whatever to do with the desert ornamental Yucca.
Belém & the Amazon Estuary — c. 1000 CE
Where the Amazon meets the Atlantic, the cassava technology of the interior turned into a cuisine of its own, and it is the only place in the world that built a kitchen on the part of the plant everyone else throws away.
The liquid pressed from grated bitter cassava is the poisonous fraction. Boiled hard for hours it becomes safe, and what is left is tucupi: a thin, sour, deep yellow broth, often fermented afterwards, with a savour that has no European equivalent. It is the base of the Pará kitchen. Paired with jambu, the mouth-numbing leaf that tingles like a mild Sichuan pepper, it makes tacacá, sold from tureens at street corners in Belém in the late afternoon and drunk from a gourd bowl with dried shrimp and a slick of tapioca gum at the bottom. The same broth cooks duck in pato no tucupi, the dish of the Círio de Nazaré festival.
The starch that settles from the same liquid is worked here as goma, and the coarse-toasted meal of the region, farinha d'água, is made from roots soaked in the river until they soften and sour before pressing, which gives it a pungency that southern Brazilians find startling.
It is worth stating plainly what this represents. The estuary peoples took the toxic waste stream of a detoxification process, worked out that prolonged boiling made it not merely safe but delicious, and built a regional cuisine on it. Nothing else in this atlas is quite the same kind of achievement.
Salvador, Recife & the Brazilian Northeast — c. 1550 CE
The Portuguese arriving on the Brazilian coast found a fully developed cassava technology already in place among the Tupi, and rather than replacing it with wheat, which would not grow, they adopted it entire. Farinha became the bread of the colony: the ration of the sugar mills, the provision of the bandeirante expeditions into the interior, and, in the grimmest use it was ever put to, the food loaded aboard slave ships for the Atlantic crossing.
Out of that came the two preparations the Brazilian table still cannot do without. Farofa is farinha toasted in butter or oil, usually with onion and often with egg, bacon, or banana, and it goes beside beans, beside roast meat, and beside the national feijoada as a matter of course. Beiju, which the rest of Brazil now calls simply tapioca, is made from the pure starch rather than the meal: hydrated goma is scattered into a dry pan, where the grains fuse within a minute into a soft white crepe, folded over grated coconut or cheese and sold from stalls all over the Northeast.
The sertão, the dry interior behind the coast, is where the crop earned its reputation. Cassava carries drought that defeats maize and beans, and it can be left standing in the ground through a bad year and dug when it is needed. Paçoca, the pressed sweet of ground peanuts, sugar, and fine farinha, belongs to that country and to the June festivals of Saint John.
This coast is also where the crop left the continent. Portuguese ships working the South Atlantic circuit between Bahia and Luanda carried it to Africa from the 1590s; the Dutch, who held Pernambuco from 1630 to 1654 and learnt the crop thoroughly whilst they were there, carried it east to Java in the following century.
Luanda & the Kingdom of Kongo — c. 1590 CE
Cassava entered Africa here, carried on Portuguese ships running the South Atlantic circuit between Bahia and Luanda in the closing years of the sixteenth century, and it is not an exaggeration to say that it changed the continent's diet more than any other American plant except maize.
It took hold because it answered the conditions. The roots keep in the ground for a year or more and can be dug when wanted, which made the crop nearly impossible to destroy in a raid or seize at harvest, and that mattered enormously in a region being torn apart by the slave trade. It tolerates the acid, leached soils of the Congo and Angolan interior that exhaust quickly under other crops. And the Portuguese who brought it had learnt the processing in Brazil, so the knowledge crossed with the plant, which is why African cassava cookery so closely resembles Brazilian.
Angola calls the root bombó when it has been retted and dried, and mills it into the flour that makes funge: a stiff, smooth, elastic porridge worked in the pot with a wooden stick until it pulls away clean, turned out in a mound, and torn off in pieces with the right hand to scoop up whatever stew sits beside it. It is the daily bread of Angola and it is eaten at nearly every meal.
From the Kongo the plant moved in three directions that this journey follows: east into the Congo basin, north along the Guinea coast, and eventually across the continent to the Indian Ocean.
Kinshasa & the Congo Basin — c. 1650 CE
The Congo basin took cassava further than anywhere else on earth, and it is the region that made the fullest use of the whole plant. The Democratic Republic of the Congo is second only to Nigeria in what it grows, and cassava supplies a larger share of the national diet there than any single crop supplies in almost any other country.
The root is retted rather than grated here: whole peeled roots are left to soak in a river or a pit for three to five days until they soften and sour, which ferments and detoxifies them at once. The softened mash is pounded, wrapped in leaves, and boiled into chikwangue, a dense sour loaf that keeps for days and travels to market by the sackful.
The leaves are the other half, and they are the more nutritious half. Young cassava leaves are pounded to a coarse green paste in a wooden mortar and simmered for an hour or more with palm oil, onion, and often smoked fish or groundnut paste, to make pondu, called saka-saka across much of the region: the national vegetable of both Congos and the dish a Congolese cook abroad misses first. The long cooking is not for texture; the leaves need it for the same reason the root needs its processing.
That pairing is the point. Cassava root is very nearly pure starch and will not sustain anyone on its own, and a diet resting on it produces deficiency disease. The leaf carries real protein, and the fact that this region eats both halves of the plant at the same meal is a piece of nutritional good sense arrived at long before anybody could have explained it.
Manila & the Philippines — c. 1650 CE
Cassava reached Asia by an entirely separate route from the one that took it to Africa, and it reached it going the other way round the world. The Manila galleon ran between Acapulco and Manila from 1565 to 1815, and it carried into the Philippines the American plants the Spanish had already established in New Spain and the Caribbean, cassava among them.
It settled into the archipelago as a secondary staple, grown where rice will not crop well and eaten most heavily in the Visayas and Mindanao, and the Filipino kitchen did with it what the Filipino kitchen does with most starches: turned it into kakanin, the vast family of sweet steamed and baked rice and root cakes eaten at merienda and at every fiesta.
The best known of them is cassava cake, in which the grated root is bound with coconut milk and eggs, baked, and finished under heat with a thick custard of coconut cream and condensed milk that browns and blisters on top. It is a genuinely modern dish in its present form, since the condensed milk arrived with the Americans, and it is now the standard contribution to any Filipino gathering anywhere in the world.
The pairing with coconut is not incidental. The root is bland and dry and the coconut supplies the fat, the sweetness, and the perfume it lacks, which is the same bargain struck in the Kerala kitchen and, in a savoury key, on the Swahili coast.
Ilha de Moçambique & the Swahili Coast — c. 1750 CE
Cassava reached the Indian Ocean coast of Africa by both of the routes open to it: overland across the Congo basin from the Kongo kingdom, and by sea on Portuguese ships working the Mozambique stations. By the eighteenth century it was established along the coast and the offshore islands, and it spread inland to become a principal food of Mozambique, Tanzania, and the lake regions of Uganda.
What the Swahili coast did with it is distinct from anything in West Africa. The root is boiled or fried and eaten with fish, or dried into makopa and pounded to flour for ugali, which along this coast is very often cassava rather than the maize the word usually implies inland.
The dish that matters most, though, is made from the leaves. Matapa pounds young cassava leaves in a wooden mortar and simmers them with coconut milk, garlic, and ground cashews or peanuts until the whole thing collapses into a thick, dark green stew, frequently with prawns or crab through it. It is the national dish of Mozambique, and it shows the crop meeting the two things this coast has always had in abundance: the coconut and the sea.
This coastline was also the staging point for the last leg of the plant's journey west to east. Portuguese shipping running between Mozambique, Goa, and the Malabar Coast carried cassava to India, where it would sit almost unnoticed for a century before famine gave it a country.
Ouro Preto & Minas Gerais — c. 1750 CE
The gold rush that filled the mountains of Minas Gerais in the eighteenth century pulled tens of thousands of people into country with no wheat and poor communications, and the food that came out of it was built on cassava starch rather than on the toasted meal of the coast.
Polvilho is the washed-out pure starch of the root, and it comes in two forms that behave quite differently. Sweet polvilho is simply dried; sour polvilho, polvilho azedo, is fermented in water for weeks before drying, which breaks down the starch enough that it puffs dramatically when it is baked. That fermentation is what makes the region's baking possible.
Pão de queijo is the result and it is now eaten across Brazil at every hour: sour polvilho scalded with hot milk and oil, worked with egg and a hard aged queijo minas, and baked into small rolls that are crisp outside and hollow and stretchy within. It contains no wheat at all and never did, which is an accident of colonial supply that has turned into one of the few genuinely great gluten-free breads.
The elasticity is worth understanding, because it is the property that distinguishes cassava starch from cassava flour and from every cereal flour. Gelatinised cassava starch forms a cohesive, rubbery network with no gluten involved whatever. It is the same property that gives a tapioca pearl its chew and a beiju its fold, and it is why substituting cassava flour into any of these recipes produces not a variation but a failure.
Java & the Dutch East Indies — c. 1810 CE
The Dutch introduced cassava to Java at the beginning of the nineteenth century, and they knew exactly what they had: they had held Pernambuco in Brazil for a quarter of a century and had watched the crop feed a colony. Through the nineteenth century the colonial administration promoted it hard across Java as insurance against the rice failures that periodically emptied the villages, and it took root in the dry limestone country of the south coast and the eastern salient where rice would not grow.
Javanese has its own words for it, singkong and ubi kayu, the latter meaning wood tuber, and the association with hardship has never entirely lifted. Cassava was what people ate when the rice ran out, and within living memory tiwul, made from dried and re-milled cassava, was the food of the poorest districts. That memory sits oddly alongside the affection the same foods now command.
The repertoire is large and mostly sweet. Getuk steams and mashes the root, works it with palm sugar and a little salt, and rolls or presses it before burying it in fresh grated coconut; getuk lindri, pressed through a grinder into ribbons and sold in pastel stripes, is a street sweet of central Java. Tapai singkong ferments boiled cassava with a yeast starter for two or three days until it turns soft, sweet, faintly alcoholic, and slightly fizzy, and is eaten on its own or worked into cakes and drinks.
Indonesia is now among the largest producers on earth, and from Java the crop moved on into mainland Southeast Asia, where a country with no cassava tradition at all was about to make it an industry.
Lagos, Ibadan & Yorubaland — c. 1850 CE
Nigeria grows more cassava than any other country in the world, by a very wide margin, and almost none of it leaves. It is a food crop rather than a commodity, and the form most of it takes is garri.
Garri is grated cassava that has been packed into sacks, weighted, and left to ferment for three to five days, then sieved and toasted in a wide shallow pan over a fire, stirred constantly until it is dry, gritty, and pale gold. The souring and the toasting between them finish the detoxification, and the result keeps for months in a sack in a hot climate. It is eaten two ways: soaked in cold water with sugar, groundnuts, and ice as garri soakings, which is the cheapest cold meal in West Africa, or stirred into boiling water into the stiff dough called eba, torn off in pieces and used to scoop up egusi, okra, or pepper soup.
The plant arrived on this coast with the Portuguese, but the processing technology arrived twice. The close resemblance between garri and Brazilian farinha is not a coincidence: the Afro-Brazilian returnee communities who settled in Lagos, Badagry, and along the Bight of Benin from the 1830s, the people known as Agudás or Amaros, brought back techniques their families had used in Bahia, and the nineteenth-century spread of garri through Yorubaland followed them.
Cassava's twentieth-century career in Nigeria was as a crop of resilience. It expanded enormously during and after the Biafran war, when the roots that could be left in the ground and dug at need were the difference between eating and not, and it has expanded again with every currency crisis since.
Accra & the Gold Coast — c. 1880 CE
Cassava came to the Gold Coast along the Guinea littoral, carried west by the same coastal traffic that had already put it into the Bight of Benin, and it spread inland through the nineteenth century. Ghana is now among the largest producers in the world and eats more of it per head than almost anywhere, and the Ghanaian kitchen is unusual in treating the root as a partner to other starches rather than as a staple standing alone.
Banku is the clearest case: fermented maize dough and grated cassava, in something like two parts to one, cooked together and worked hard with a wooden spatula until the mass is smooth, dense, and elastic and pulls cleanly from the pot. The maize supplies the sourness and the flavour, the cassava the stretch and the body, and neither on its own gives banku. It is eaten with grilled tilapia and a fiercely hot pepper and tomato relish along the whole southern coast, and with okra stew in the Volta Region where it belongs.
The same partnership runs through Ghanaian fufu, in which boiled cassava is pounded in a tall wooden mortar together with plantain or cocoyam until it becomes a smooth, heavy, faintly elastic dough. Cassava alone pounds to something too sticky to be pleasant; the plantain corrects it. Kokonte, the flour of sun-dried cassava chips, is the dry-season and lean-year version, darker and stronger tasting.
Ghana is also the country that industrialised the crop's export in a modern form, milling cassava into the flour that has spread through West African baking as a partial substitute for imported wheat.
Thiruvananthapuram & Travancore — c. 1880 CE
Cassava came to the Malabar Coast with Portuguese shipping in the seventeenth century and then did almost nothing for two hundred years. It sat in gardens as a curiosity whilst Kerala ate rice, and it might have stayed there.
What changed it was hunger. The famines that struck Travancore in the second half of the nineteenth century, and the collapse of rice supply that came with them, pushed the royal house into promoting cassava deliberately as a substitute. Maharaja Vishakham Thirunal, who ruled in the 1880s and had a genuine interest in agriculture, is credited with the campaign that put it into every smallholding in the state. Within a generation Kerala had gone from not eating cassava to eating it daily, which is about as fast as a staple has ever changed anywhere.
Malayalam calls the root kappa or maracheeni, tree tuber, and Indian English calls it tapioca, which is a confusion peculiar to the subcontinent: elsewhere that word means the starch, here it means the root itself. Kappa puzhukku boils the peeled root and crushes it with a coarse paste of grated coconut, green chilli, turmeric, and shallot, finished with mustard seed and curry leaf spluttered in coconut oil. Eaten with a fiery red meen curry of sardine or kingfish soured with kudampuli, the pairing known as kappa-meen is as close to a national dish as Kerala has.
The plant also carried a distinct social meaning. It was the food of the labourer and the smallholder rather than of the landowning table, and its rise to affectionate respectability in Kerala over the last half century is a change in class as much as in taste.
Abidjan & the Ivory Coast — c. 1900 CE
Cassava moved west along the Guinea coast through the nineteenth century and reached the lagoon country of what is now Côte d'Ivoire, where the Ébrié, Adjoukrou, and Alladian peoples developed a preparation that exists nowhere else and that has since become the country's culinary signature.
Attiéké is fermented cassava couscous. Peeled roots are grated and mixed with a small quantity of previously fermented cassava paste, the magnan, which works as a starter culture; the mixture ferments for a day or two, is pressed to expel the liquid, sieved into small granules, dried, and then steamed. The result is fine, pale, separate grains with a distinct clean sourness, closer in the hand to couscous than to any other cassava product on earth, and quite unlike the dense doughs made everywhere else from the same root.
It is eaten with grilled fish and raw onion and tomato in chilli and oil, which is the standard lunch of Abidjan, and it travels the region as a packaged product in a way that fufu and banku cannot, because it is dry and granular and needs only steaming. UNESCO inscribed the practices and knowledge associated with attiéké on its intangible cultural heritage list in 2024.
The starter culture is the technical point of interest. Nearly every other African cassava technology relies on spontaneous fermentation, on whatever organisms happen to be present in the sacks or the soaking pit. Attiéké is inoculated deliberately from a previous batch, in the manner of a sourdough, which gives a control over the result that the other methods do not have.
Freetown & the Upper Guinea Coast — c. 1910 CE
Cassava moved west along the Guinea littoral through the nineteenth century and reached the forest coast of what are now Sierra Leone and Liberia, where it met a food culture built more completely on rice than anywhere else in Africa. It did not displace the rice. It became the sauce.
What this coast does with cassava is eat the leaf. Plasas, from the Krio for palaver sauce, pounds young cassava leaves to a fine dark paste and simmers them for hours with red palm oil, smoked fish, and ground groundnut or egusi until the whole thing turns thick and almost black. It is served over rice, and the combination is the everyday meal of both countries.
That pairing is nutritionally shrewd in a way nobody planned. Cassava root is very nearly pure starch, but the leaf carries several times the protein along with iron and vitamins, and rice with plasas is a considerably better plate than either half suggests. The long cooking is doing safety work at the same time, since the leaves carry the same cyanogenic compounds as the root.
Freetown adds a layer found nowhere else. The Krio, descended from liberated Africans resettled from Britain, Nova Scotia, and recaptured slave ships, built a creolised kitchen on top of Mende and Temne cooking, and gave the dish the English word it still carries.
Nakhon Ratchasima & the Khorat Plateau — c. 1950 CE
Cassava came into Siam from the Malay world and the Indies in the nineteenth century, as a garden crop of no great consequence. Thailand had no traditional cassava culture worth the name, and it is now the largest exporter of cassava products in the world. That is an industrial story rather than a culinary one, and it belongs to the Khorat Plateau in the north-east.
The plateau is the poorest and driest farming country in Thailand, with thin sandy soils on which rice is a gamble. From the 1950s, and at speed from the 1970s, it was planted with cassava for export, first as dried chips and pellets for European animal feed and then, as the trade matured, as refined starch. Thai tapioca starch now underpins a great deal of the world's processed food, and Thai starch is what the great majority of the world's boba pearls are made from.
The Thai kitchen's own use of it is smaller but genuinely its own, and it turns almost entirely on the pearl. Sakoo, which Thai and Indian English alike call sago although it is nothing of the kind, is the small tapioca ball. Sakoo sai moo wraps a sweet-salty filling of minced pork, peanuts, palm sugar, and coriander root inside a translucent tapioca skin and steams it until the dumplings turn glassy; they are served with lettuce, coriander, and slivers of raw bird's eye chilli. Sakoo piak and the coconut milk puddings use the same pearls in the sweet register.
The distinction between tapioca and true sago is worth holding onto here. Sago is the pith starch of the palm Metroxylon sagu and is a real food of eastern Indonesia and New Guinea. What is sold as sago in Bangkok, Chennai, and London is almost always cassava.
Taichung & Taiwan — 1986 CE
The most widely recognised cassava product in the world today is not a bread, a porridge, or a meal. It is a chewy black sphere sitting in the bottom of a plastic cup, and it is about forty years old.
Tapioca pearls had long been used in Taiwanese shaved ice and sweet soups when, in the mid-1980s, someone in Taichung put them into iced milk tea. Both the Chun Shui Tang teahouse and the Hanlin teahouse claim the invention, and the dispute has been to court without being settled; what is not disputed is the city or the decade. The drink was sold through a fat straw so that the pearls could be drawn up with the tea, and the innovation was as much the straw as the recipe.
The pearls are made by rolling cassava starch with water and, for the black ones, caramelised brown sugar, into balls that are boiled until they turn translucent and then steeped in sugar syrup. Their whole appeal is texture, the springy resistance that Chinese calls QQ, and that texture is a property of gelatinised cassava starch specifically. No cereal starch does it, which is why the drink could not have been invented before cheap Thai tapioca starch was reaching Taiwan in quantity.
From Taichung it went to Hong Kong, Japan, and the Chinese mainland in the 1990s, and worldwide in the 2000s. It is the only case in this atlas of a nine-thousand-year-old Amazonian famine crop arriving in a European or North American high street as a fashion, and most of the people drinking it have no idea that the pearl and the West African garri are the same root.
