Stuffed vegetables, ripieni, are a cornerstone of Italian home cooking, a tradition rooted in the cucina povera philosophy of wasting nothing and using the vessel of the vegetable to amplify and extend a small amount of meat or cheese into a complete and satisfying dish. Zucchine ripiene appear across the Italian peninsula in dozens of regional variations: in Liguria stuffed with rice and herbs; in Rome with a mixture of ricotta and anchovy; in southern Italy with spiced minced meat and pine nuts. The dish reflects the Italian instinct to cook with the structure of the ingredient rather than around it; the zucchini is both container and component. Zucchini (courgette) is the summer form of the squash family, and in Italy it has been cultivated with the same loving attention as any other produce. The scooped flesh is never discarded; it is mixed directly into the filling, so the vegetable becomes both shell and interior.

Ingredients

Main

  • 4 whole large zucchini (courgettes), halved lengthways

Filling

  • 250 g minced pork or beef (or a mixture)
  • 1 whole egg
  • 50 g Parmesan, finely grated, plus extra for topping
  • 2 cloves garlic, minced
  • 3 tbsp breadcrumbs
  • 4 tbsp flat-leaf parsley, finely chopped

Seasoning

  • 1 tsp salt
  • 0.5 tsp black pepper

Cooking

  • 3 tbsp olive oil

Sauce

  • 200 ml passata (or 200g tinned chopped tomatoes)

Method

  1. Scoop the flesh from the zucchini halves using a teaspoon, leaving a shell about 1 cm thick. Finely chop the scooped flesh; do not discard it.
  2. Combine minced meat, chopped zucchini flesh, egg, Parmesan, garlic, breadcrumbs, parsley, salt, and pepper in a bowl. Mix well; the filling should be cohesive.
  3. Preheat oven to 180°C (355°F). Heat 2 tablespoons olive oil in a skillet over medium heat. Briefly sauté the filling for 3–4 minutes until the meat is no longer raw. This step prevents a watery filling during baking.
  4. Spoon the filling generously into each zucchini half, mounding it slightly above the rim. Pour passata into the base of a baking dish. Arrange stuffed zucchini over the passata. Drizzle with remaining olive oil and scatter extra Parmesan over the filling.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake for a further 15 minutes until the filling is golden and set and the zucchini is tender.
  6. Serve with the pan juices spooned over; they will have thickened into a concentrated tomato sauce. Crusty bread is essential.

Notes

The vegetarian version is excellent: replace the meat with ricotta, more Parmesan, lemon zest, and fresh herbs. The technique is the same. Zucchine ripiene keep well refrigerated for 2 days and reheat beautifully.
