Zanahorias aliñadas (literally 'seasoned carrots', aliñar meaning to dress or season in Andalusian Spanish) are one of the most characteristic tapas of Seville, Málaga, Granada, and the broader Andalusian tradition, where they are served as part of the free tapas spread at every bar. The word zanahoria, 'carrot' in Spanish, is a direct Arabic borrowing (from asfanāriyya or similar forms), which encodes the history of the dish: the carrot arrived in the Iberian Peninsula with Moorish agricultural knowledge during the period of Islamic al-Andalus (711–1492 CE), when Arab and Berber farmers transformed Spanish agriculture with irrigation systems and new crops from Persia, India, and Central Asia. The combination of cumin (comino), another Arab spice trade import: with garlic, vinegar, and herbs that defines zanahorias aliñadas is directly descended from the Moorish way of dressing cooked vegetables with spiced acid dressings that we also see in Morocco today. The dish is technically simple but produces a deeply flavourful, slightly sweet, cumin-forward marinated carrot that is one of the great tapas bar snacks.
Zanahorias aliñadas improve with time: made the night before, they are considerably more flavourful than when freshly made. They keep refrigerated for 3–4 days; always bring fully to room temperature before serving, as cold olive oil mutes the flavour. In Seville, they are frequently served alongside boquerones en vinagre (white anchovies) and olives as part of the classic tapas spread. Some Sevillian bars add a small pinch of cayenne for heat.
