If any single dish carried quinoa into the everyday diet of Europe and the wider West, it is the quinoa salad. Cool, fluffy quinoa tossed with crisp vegetables, fresh herbs, a salty cheese, and a bright dressing became, in the 2000s and 2010s, the ubiquitous lunchbox, deli-counter, and buffet staple of the health-conscious table, valued for being filling without being heavy, gluten-free, protein-rich, and good to eat at room temperature hours after it is made. In its most common Mediterranean-leaning form it gathers cucumber, tomato, red onion, parsley and mint, and crumbled feta, dressed simply with lemon and olive oil. The dish has no fixed recipe and no deep tradition; it is a thoroughly modern, global-North creation, the natural home of quinoa in a Western kitchen that prizes the make-ahead salad and the portable lunch. Its great virtue is that the quinoa, unlike a leaf salad, holds up: dressed and left to stand, it only improves as the grains drink in the dressing, which makes it ideal for preparing ahead and for feeding a crowd. For all that it is a creature of the superfood age rather than any culinary heritage, the quinoa salad is genuinely good, and it has done more than any other dish to make the ancient Andean grain a familiar, everyday food on tables far from the mountains where it was born.
Infinitely adaptable: add roasted vegetables, chickpeas, olives, dried fruit, toasted nuts or seeds, or swap the feta for avocado to make it vegan. Red or tricolour quinoa holds its shape and adds colour. It keeps in the refrigerator for up to three days, which makes it an ideal packed lunch or buffet dish.
