Quinoa Breakfast Porridge

The quinoa breakfast porridge is the modern North American answer to the morning bowl of oats, a creature of the health-food age that puts the gluten-free, high-protein grain to work at breakfast. Quinoa is simmered with milk (dairy or a plant milk), sweetened with maple syrup or honey, and warmed with cinnamon and vanilla, then crowned with fresh or dried fruit, nuts, and seeds, much as one might dress a bowl of porridge oats. It is wholesome, sustaining, and quick, and it became a fixture of the wellness breakfast as quinoa spread through the kitchens of the global North in the 2010s. In a sense the dish is a Northern reinvention of something the Andes had always known: in Ecuador and across the highlands, quinoa simmered with milk and sweetened with cinnamon and panela has been a breakfast comfort for generations, the quinua con leche of the sierra. The American breakfast porridge arrives at much the same place by a different route, reaching for the grain's protein and its complete nutrition to start the day, and dressing it in the granola-bowl idiom of fruit, nuts, and seeds. Nutty, warming, and endlessly adaptable to whatever fruit the season offers, it is one of the gentlest and most popular ways the modern Western kitchen has found to eat the mother grain of the Andes.

Ingredients

Porridge

  • 100 g quinoa, rinsed thoroughly under cold water
  • 400 ml milk (dairy, almond, or oat), plus more to serve
  • 0.5 tsp ground cinnamon
  • 0.5 tsp vanilla extract
  • 2 tbsp maple syrup or honey, to taste
  • 1 pinch salt

Toppings

  • fresh berries or sliced banana, to top
  • toasted nuts and seeds, to top

Method

  1. Rinse the quinoa well under cold water to remove the saponins, and drain.
  2. Put the quinoa, milk, cinnamon, and salt in a saucepan and bring to a gentle simmer.
  3. Simmer gently, stirring often, for about 18 to 20 minutes, until the quinoa is very soft, has uncurled its tails, and the porridge is thick and creamy.
  4. Stir in the vanilla and the maple syrup or honey, and loosen with a splash more milk to your preferred consistency.
  5. Spoon into bowls and top with fresh fruit, toasted nuts and seeds, and an extra drizzle of maple. Serve warm.

Notes

Make a batch of plain cooked quinoa ahead and reheat with milk for a fast breakfast. Use any milk and any toppings: stewed apple and cinnamon, berries and almonds, banana and peanut butter, or dried fruit and seeds all work well. This is essentially the Ecuadorian quinua con leche dressed in the modern granola-bowl style.
