The mortar and pestle (its very name encoded in pesto, from the Latin pistare, to pound) is the oldest food preparation tool in the human record. Ligurian cooks have been grinding aromatic herbs with oil and cheese in stone mortars since the Roman era. The specific form of pesto Genovese we recognise today (basil, not marjoram or walnut; pine nuts, not breadcrumbs; Parmigiano and Pecorino together) crystallised in the 19th century, with the first written recipe appearing in Giovanni Battista Ratto's La Cuciniera Genovese in 1863. But the essential genius is older: the Genovese discovered, centuries before cold emulsification was understood, that pounding basil in stone crushed the cells differently from a blade, releasing oils without bruising the chlorophyll into bitterness. The mortar is not merely traditional: it is technically superior. Genovese basil itself is a distinct cultivar: smaller, softer leaves, less anise, less clove, more cream and lemon than any other variety in the world.
Authentic pesto Genovese is never cooked, heat destroys the volatile basil oils that define its character. It is added to warm pasta, not hot. The classic pairings are trofie (the local twisted Ligurian pasta) or trenette. Adding a boiled potato and green beans to the pasta pot is the Genoese tradition. Pesto freezes well without the cheese, add cheese only after thawing.
