Vietnam is the world's foremost processor and exporter of cashews, and in the red basalt country of Bình Phước, the heart of its cashew lands, the nut's best-loved everyday form is hạt điều rang muối, salt-roasted cashews. What sets the Vietnamese style apart is that the cashews are roasted with their thin, papery reddish-brown skins still on, which protects the kernel, deepens the flavour, and gives the nut a rustic, handsome look; they are tumbled with salt and often garlic and a little chilli until crisp, fragrant, and lightly blistered. Sold by the bag in every market and pressed on every visitor to the province as the pride of the region, they are the snack of the Vietnamese table, set out with tea, with beer, and at Tết, the lunar new year. Simple as it is, the dish honours the nut at the centre of a vast modern industry: it is the cashew, in the country that shells more of it than any other, eaten in its purest and most satisfying form.
For the most authentic Bình Phước style, dry-roast the cashews skin-on in a wok with coarse salt rather than oil, sieving off the salt at the end. Garlic, chilli, and lime leaf are common additions but pure salt-roasted cashews are equally traditional. Watch them like a hawk near the end; the line between golden and burnt is a matter of a minute.
