Musk melon was cultivated in the Nile Delta from at least the second millennium BCE, appearing in tomb paintings and agricultural records of the New Kingdom period alongside figs, pomegranates, and grapes. Egyptian culinary papyri describe serving the ripe melon sliced and dressed with black seed (Nigella sativa, known in Arabic as habbatus sauda) and date syrup (dibs al-tamr, the thick, dark reduction of boiled dates). Both Nigella sativa and the date palm were among the most important food and medicinal plants of ancient Egypt. The combination of sweet, fragrant melon flesh with the slightly bitter, peppery warmth of ground black seed and the deep, molasses-like richness of date syrup achieves a flavour counterpoint that the Egyptians exploited across many preparations. This pairing endured into the medieval Arab culinary tradition, where black seed was prized both as seasoning and medicine, and date syrup was a ubiquitous sweetener across the Islamic world.
Date syrup (dibs al-tamr) is available at most Middle Eastern grocery stores and increasingly at larger supermarkets. It is made by simmering dried dates in water and pressing out the thick, dark liquid. Pomegranate molasses is a reasonable substitute if date syrup is unavailable, though it is sharper and less sweet. Nigella sativa seeds (sold as black seed, black cumin, or kalonji) are widely available at South Asian and Middle Eastern food stores. They are not the same as black sesame seeds.
