The caipirinha is the national cocktail of Brazil, and in its classic form it is the simplest drink imaginable: lime, sugar, and cachaça, the spirit distilled from fresh sugar-cane juice, muddled together over ice. Its name comes from caipira, the word for a countryman or rustic, and the drink's origins lie in the sugar-cane country of São Paulo, where it is said to have begun as a folk remedy of cane spirit, lime, garlic, and honey taken against influenza. Once the caipirinha became the fixture of every Brazilian bar and beach kiosk, it began to admit the whole of the country's extraordinary fruit basket, and of all these variations the passion fruit is the most beloved. Maracujá suits the drink perfectly: its acidity does the work the lime would do, but with a far more powerful floral perfume, and its seeds and pulp give the glass a texture and a look no other version has. The result is fragrant, sharp, and dangerously easy to drink, and in Brazil it is served everywhere from the corner boteco to the beach barraca. It is also, in the popular imagination, the caipirinha most associated with a hot afternoon by the sea.
The balance of sugar to fruit depends entirely on the fruit, which varies enormously in sharpness; taste and adjust. A small squeeze of lime is not strictly traditional in a maracujá caipirinha but many bars add it to sharpen the finish. Cachaça is the proper spirit and gives the drink its grassy, funky character; made with vodka the drink becomes a caipiroska, and with white rum a caipiríssima. For a batch, blend passion fruit pulp with sugar and cachaça and pour over crushed ice in each glass.
