If the British have a way of making any vegetable irresistible, it is to bake it under a cheese sauce, and the Brussels sprout takes to the treatment as happily as its cousin the cauliflower. The Brussels sprout cheese bake is the sprout version of the beloved cauliflower cheese: blanched sprouts folded into a mustardy, mature-Cheddar béchamel, topped with more cheese and a handful of crumbs, and baked until the sauce bubbles and the top turns crisp and golden. It is a dish of the Sunday table and the Christmas sideboard, and a reliable way to win over even the sprout-sceptic, for the richness of the sauce rounds off any lingering bitterness. The gratin of a Brassica in white sauce is a thoroughly British comfort tradition, and the sprout, with its firm texture and slight sweetness when properly cooked, holds up well beneath the sauce where a softer vegetable might collapse. A good pinch of mustard and a sharp, mature Cheddar are what lift it; some cooks scatter crisp bacon or a little nutmeg through as well. Warming, rich, and golden-topped, the Brussels sprout cheese bake is the vegetable at its most comforting, and proof that the much-maligned sprout, treated kindly, belongs on the British table all winter long.

Ingredients

Sprouts

  • 800 g Brussels sprouts, trimmed and halved

Cheese sauce

  • 50 g butter
  • 50 g plain flour
  • 600 ml whole milk, warmed
  • 1 tsp English mustard
  • 150 g mature Cheddar, grated
  • grating of nutmeg
  • salt and freshly ground black pepper

Topping

  • 40 g Cheddar or Parmesan, grated, for the top
  • 30 g fresh breadcrumbs

Method

  1. Heat the oven to 190°C (fan). Blanch the halved sprouts in boiling salted water for 4 to 5 minutes, until just tender. Drain very well and tip into a buttered baking dish.
  2. Make the sauce: melt the butter in a saucepan, stir in the flour, and cook the roux for a minute. Gradually whisk in the warm milk, a little at a time, until smooth, then simmer gently, stirring, until thickened to a coating sauce, 4 to 5 minutes.
  3. Off the heat, stir in the mustard, the grated Cheddar, and a grating of nutmeg until the cheese melts. Season with salt and pepper.
  4. Pour the cheese sauce evenly over the sprouts. Mix the topping cheese with the breadcrumbs and scatter over the top.
  5. Bake for 20 to 25 minutes, until the sauce is bubbling and the top is crisp and golden.
  6. Let it settle for a few minutes before serving.

Notes

A handful of crisp bacon lardons stirred through before baking makes a heartier dish. The bake can be assembled ahead and refrigerated, then baked from cold (allow a little longer). It is a fine vegetarian centrepiece as well as a side.
