Adobo arequipeño is the Sunday-morning institution of Arequipa, Peru's elegant southern city beneath its volcanoes, traditionally eaten at dawn after a Saturday night out, sold from picanterías and market stalls as a restorative. Pork is marinated overnight in chicha de jora (the fermented-maize beer of the Andes), ají panca and ají colorado, garlic, cumin, and, above all, oregano, then slow-cooked until meltingly tender in a fragrant red broth. Oregano is the defining herb of the dish, used in Arequipa with a lavishness found nowhere else, for the Peruvian south is one of the great oregano-growing regions of the world, where the Mediterranean herb the Spanish brought has flourished so completely that Peru is now amongst the largest exporters of oregano on earth. Adobo is that herb's Andean masterpiece.
Chicha de jora, the Andean fermented-maize beer, is the authentic marinade and gives adobo its gentle sourness; a dark beer with a little vinegar is the usual substitute. Ají panca is a mild, fruity, deep-red Peruvian chilli; any mild dried red chilli paste stands in. Oregano is the signature herb of Arequipan cooking and is used here in genuinely large quantity; this is the dish that shows why Peru became one of the world's great oregano growers.
