Bulgogi (불고기; literally 'fire meat') is Korea's most internationally recognised dish and one of its most ancient, with roots in the Goguryeo kingdom (37 BCE–668 CE) where grilled meat preparations called maekjeok (貊炙) are documented. The defining characteristic of bulgogi is not the beef or the soy sauce; it is the Korean pear (bae, 배). Grated Korean pear contains active proteolytic enzymes (cysteine proteases) that literally cleave the peptide bonds holding beef muscle fibres together, breaking them down at the molecular level and producing a tenderness that no amount of slow cooking, pounding, or marination in acid can match. The Korean pear's enzymatic tenderising effect was discovered, almost certainly by accident, at some point in the medieval period, and it became the irreplaceable secret ingredient of Korean grilled beef. Without Korean pear, bulgogi can still be made, but it will never be as extraordinary. The apple (used as a substitute) or pineapple have some similar effect, but the flavour and texture of the Korean pear in this preparation is unique.
The proteolytic enzymes in Korean pear (and in other fruits like kiwi, pineapple, and papaya) work by cleaving the peptide bonds in myosin: one of the main structural proteins in muscle fibre. Korean pear contains a cysteine protease (actinidin-like) that is particularly effective on beef at refrigerator temperature, meaning the enzyme works during cold marination rather than requiring heat. This makes Korean pear uniquely suited to a cold marinade: the meat tenderises in the refrigerator overnight without the mushiness that results from enzyme activity at room temperature. The Korean culinary discovery of this property; whether accidental or deliberate; is one of the most significant examples of empirical food science in any traditional cuisine.
